So this is probably one of my favorite meals! My friend Angie was over the other night and I made it for her, she loved it too! So by request here is my Chicken Asian Lettuce Wrap Recipe!
You will need:
1 lb ground chicken w/ 1 tbsp. olive oil/coconut oil
2 medium zucchini /w 1-2 tbsps. olive oil/coconut oil
1 8oz can of water chestnuts
3-4 green onions
2tbsps minced garlic (I buy a jar of already minced garlic, I can find it in the produce section of our grocery stores)
1/2 cup homemade hoisin sauce (see my hoisin sauce recipe) (or use store bought)
1tbsp + 2tsp rice wine vinegar
1tbsp + 1tsp wheat-free tamari
3tsp dark sesame oil
1 head of lettuce
First cook your ground chicken in a tbsp of olive oil on medium-high heat until done. While it is cooking I would start chopping your zucchini (I leave the skin on mine) into small cubes, also chop your water chestnuts (I buy whole canned water chestnuts) into cubes as well. Next I would chop your green onion however you like it. When the chicken is done set it aside. In another sautee pan I would add your 1-2tbsps of olive oil and your chopped zucchini. Cook this on medium-high heat until the zucchini is softened slightly. Once the zucchini is softened add your garlic and sautee for about 1-2 minutes. Next your going to add everything else except the green onion to your pan. Cook until everything is mixed well and heated through about 3-5 minutes. I use the green onion to top the portions on our plates (almost like a garnish). I serve this amazing mix with lettuce leaves. We use the lettuce leaves as our wraps! This makes enough for about 4 servings.
Since Josh and I are the only ones normally eating it. We always have enough leftover for the next day. So I often use it as a breakfast. I leave it cold and dish it into a bowl, then I top it with a warm over-medium egg or two on top! And sometimes bacon on the side! This dish is great both ways!
