This is a quick easy meal that doesn’t require a lot of prep time. Also, it doesn’t require very many ingredients. I often make the spice base for the chicken ahead of time which cuts the time down even more. This is great for nights when short on time!
You will need:
1 lb asparagus
2 tbsps. olive oil or butter or coconut oil
2 tbsps. minced garlic (I used my already minced garlic from a jar)
First make sure you break the asparagus off and dispose of the end. The way you do this is by bending the asparagus until it breaks then throw out the end and keep the rest. Next I break mine in half. In a sautee pan over medium-high heat heat 2 tbsps. of olive oil. Add in your asparagus and garlic. Then sautee until the asparagus is cooked the way you like it.

You will need:
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
First mix all the above spices together. This spice rub makes enough for 4 chicken breasts. I always make extra and store it in a spice jar. That way I always have it on hand for a quick dinner.
For Josh and I, I only need 2 chicken breasts. I pound the chicken breasts out until they are about 1/4-1/2 inch thick. In a sautee pan I heat 2 tbsps. of butter on medium-high heat until melted. Then because I am lazy I place both my chicken breasts in the pan to coat one side with butter then I use tongs and flip them sprinkle the spice rub all over flip and do the same on the other side. Josh likes lots of spice on his, I like a little less because it definitely has a kick to it. Cook the chicken on each side about 5-6 minutes. Sometimes if the outside is cooking too fast then I will throw it in the oven at 350 for about 5-10 minutes to finish the cook time. I love this recipe! Thank you Joyful Abode!
