I love making spaghetti squash dishes! I wouldn’t survive the primal lifestyle without it! I am a noodle addict and it was really hard for me to give pasta up, but my friend the spaghetti squash made it easier. And this dish is one of my favorites, it is especially delicious!
Spaghetti Squash Bake
1 cooked spaghetti squash (see “How to Cook a Spaghetti Squash”, make sure you allow an hour to cook the squash)
4 tbsps. butter
4-5 slices of bacon (I cheat when I am in a hurry and use a sheet of microwavable bacon)
Fresh basil (optional)
Feta cheese (optional)
Salt, pepper, onion powder, garlic powder, to taste
Mozzarella Cheese (enough to cover the top of the dish)
Place the noodles from the spaghetti squash in the bottom of an 8×8 glass baking dish, the noodles should come half way up the sides. Cut the 4 tbsps. of butter into 1 tbsp. squares, place each one in the four corners of the baking dish. Next break the bacon into pieces and sprinkle over the top of the noodles. Dice the tomato up and layer that next. At this point if you want to add the basil (chop it up) and feta cheese just sprinkle as much as you would like. Sprinkle the whole thing with salt, pepper, onion powder, and garlic powder to your liking. Then I cover the whole thing with mozzarella cheese. Cover the dish with foil and bake at 350 until butter and cheese are melted. Then you are ready to serve!
