Chocolate Chip Cookies

These are amazing grain-free, gluten free, egg free, cookies!

Preheat oven to 350.

In a large bowl add:

4 tbsps. butter (softened)

3 tbsps. flax seed meal

1/2 tsps. corn starch

1 tbsp. apple cider vinegar

1 1/2 tsp. vanilla extract

1/4 tsp. salt

1/4 cup granulated stevia (the kind that measures cup for cup)

1/4 cup coconut oil (softened)

Mix everything together with a mixer.

Next Add:

1 cup almond meal flour (I like to make part of this 1/4-1/2 cup of chunky almonds not quite down to flour consistency to add some texture.  But you don’t have to do this. It does make the cookies a little more crumbly.)

1/2 cup coconut flour

1 tsp. baking soda

1 tsp. baking powder

1/3 cup dark chocolate chips (or crushed dark chocolate bar 85% cocoa is best)

Mix all of this together. Roll into balls and flatten on greased baking sheet. Cook for 9-12 minutes.

Variation:

Use 1 soft banana

reduce butter to 3 tbsps.

reduce stevia to 1/16-1/8 cup

Add all of this to the first step.

Follow the rest of the steps the same.
