Multi Use Coconut Crust/Bread

This recipe is again thanks to Joyful Abode. Although we have modified it to use it for much, much more! This recipe is great for mini pizza crust, fake sandwich bread, or as Joyful Abode uses it for loaded fauxtato skins.

You will need:

4 eggs

2 tbsps. + 1 tsp. coconut flour

Garlic powder, onion powder, hot sauce, and salt (for sandwiches)

or

Garlic powder, salt, and Italian seasoning (for mini pizza crusts)

Preheat your oven to 325. In a small bowl combine the eggs, coconut flour, and spices until smooth. While your oven is still preheating line a baking sheet with parchment paper. Mix one last time and then drop spoonfuls of the mix onto your sheet, if making mini pizzas. If you are making sandwiches you may want to make them a little larger. If needed smooth the batter out to make a circle or oval shape. Place in oven and cook for about 7 minutes.

When we make mini pizzas we top with pizza sauce, pepperoni, and cheese and return to oven until cheese is melted.

When making sandwiches, we let the “bread” cool. Once cooled we place whatever filling on it that we like.
