Chicken Strips and Cooked Carrots

Dinner tonight was chicken strips and cooked carrots. It was so good! I thought for sure we were going to have leftovers, but everything was so good, there was nothing left!

Carrots

You will need:

6-8 carrots

1 cup chicken broth (or I used a chickenĀ bouillon cube)

1 cup water

I peel and cut the carrots. Next I add everything together in a pan and bring it to a boil over medium-high heat. I continue cooking for about 20 minutes or until carrots are easily pierced by a fork.

Chicken Strips

You will need:

1 lb. chicken breast

2 eggs

1 cup almond flour or 1/2 cup almond flour and 1/2 cup chunky/ground almonds (what you get right before it turns to flour) (I prefer the 1/2 cup of each route)

1 tsp salt

1 tsp black pepper

1Tbsp +1tsp dried cilantro

Preheat the oven to 350. Pound chicken breasts out until about 1/4-1/2 inch thick. Then slice into strips. In a bowl whisk eggs to create an egg bath for your chicken. In another bowl combine the rest of the ingredients. Grease a baking sheet. Wash your chicken in the egg and then coat with almond flour mixture on all sides and place on baking sheet. Cook at 350 for 20-25 minutes turn the chicken halfway through cook time. After chicken is cooked through turn oven to broil. Cook each side of chicken for 2-3 minutes under broiler to crisp it up. Then serve.
