Taco Pizza

So sorry its been awhile guys! Last week was my spring break from school, which you would think would mean I had lots of time on my hands. However, I took advantage of the break in school work, to get ahead in school work and spend sometime with my daughter. This week I have been working a temp job all week, in addition to school. So as you can see I have been keeping very busy! Look for a post on planning meals and staying primal/paleo even during a busy week later!

So last night I had a craving for pizza and here is what we came up with! Super easy and fast!

Great recipe size for 1-2 people. If you are making for a large family you will probably want to double this recipe!

Crust – Thank you Elana Amsterdam and “The GLUTEN-FREE ALMOND FLOUR cookbook”!

1 1/2 cups almond flour

1/4 tsp. salt

1/4 tsp. baking soda

1 tbsp. olive oil (she used grapeseed oil, but olive worked just fine)

1 large egg

Preheat the oven to 350 degrees. Set aside a large baking sheet. Cut 2 pieces of parchment paper to the size of the baking sheet.

In a large bowl, combine the almond flour, salt, and baking soda. In a medium bowl, whisk together olive oil and egg. Stir the wet ingredients into the almond flour mixture until throughly combined.

Place dough between the 2 sheets of parchment paper and roll into a 10-inch circle, 1/8 inch thick. Remove the top piece of parchment paper and transfer the bottom piece of parchment paper with the rolled-out dough onto the baking sheet.

Bake for 15 to 20 minutes, until lightly golden. Mine only took 15 minutes in an un-preheated oven, so keep an eye on it. (I start my ground beef while this is cooking, see below) Remove from oven when finished.

Toppings

1 lb. ground beef (you won’t need a full pound, so you will have a little leftovers)

marinara sauce/pizza sauce

a bunch of green onion

1 can of black olives

shredded cheddar cheese

While the crust is cooking I cook the ground beef until done. Set that aside, next I chop my black olives and green onions. Once the crust is finished I top with whatever kind of sauce I am using, the cooked ground beef, black olives, green onion, and lastly cheese. I then place it back in the oven for 10-15 minutes to heat everything through and melt the cheese. Then you done! Super easy and fast! And most importantly, yummy!

    We recently tried this with ground turkey instead and it was just as good!
