Almond Flour Shortbread

Joyful Abode had this recipe posted from a cookbook called “Recipes for the Specific Carbohydrate diet”. I have made it several times and have altered it to my mood. Its very tasty and a great versatile dish!

Almond Flour Shortbread

2 cups almond flour

5 tbsps. butter

1 tbsp. olive oil (or coconut oil)

1-2 tbsps. honey

Preheat your oven to 350. In a large bowl I add my 2 cups of almond flour. Next I add my butter, olive oil, and honey and microwave the mixture for 30-60 seconds until everything is softened. Once softened, mix everything together until well blended. Pour mixture into an 8×8 baking dish, no need to grease it. Press evenly into the bottom of the pan and then prick with a fork to ensure even cooking. Cook for 15 minutes or until edges start to brown. You will want to let the shortbread cool before cutting into it, otherwise it will crumble. Josh and I both think the texture reminds us of more like a cornbread than a shortbread. But it is really good either way!

*Josh likes to use it for dessert and top it with fresh or frozen berries!

*For a more dinner flavor I add 1-2 tsps. of thyme into the mix along with everything else. This is what I did when we had it with the chuck roast.
