Blackened Chicken Alfredo

This was sooooo good Josh and I both scraped our bowls clean! Josh said it was the best Alfredo he has ever had! This recipe made enough for us to have dinner and lunch the next day.

Spaghetti Squash

See my spaghetti squash directions. Once you have it in the oven follow along with these next steps.

Spice Rub for Blackened Chicken

1 tbsp. paprika

2 tsps. salt

1 1/2 tsps. garlic powder

1 tsp. onion powder

1/4 tsp. cayenne pepper

2 tsps. pepper

1/2 tsp. dried thyme

1/2 tsp. dried oregano

Mix this up and set aside.

Chicken Alfredo

1 lb chicken breasts

2-3 fresh broccoli heads

3 tbsps. butter

1 cup heavy cream

3/4 cup parmesan cheese mix

1/4 tsp. heaping garlic powder

pinch of nutmeg

1 egg yolk

salt and pepper to taste

First chop up your broccoli into florets and placed it in a pan, filled it with water about half way up. Place it on a burner cover it and cook on medium-high heat. Bring to a boil and cook until tender, about 10 minutes. While your broccoli is boiling get a small pan and place that on another burner. Add your butter to it and melt it over medium heat. Once your butter is melted add your heavy cream and cheese cook until throughly mixed next add your egg yolk and spices and cook for another 3-5 minutes. When finished remove from heat and set aside. Now for the chicken, I pounded out my chicken breasts. Next I poured a little olive oil into a fry pan. Heating that up to medium-high heat. Once the oil is warmed place your chicken in your pan. Sprinkle your chicken with your blackened chicken spices, as much or as little as you want. Then flip your chicken and do the same on the other side. (Don’t forget about your broccoli) Cook your chicken until its no longer pink. If it is cooking too fast on the stove top throw it in the oven for about 10 minutes. Now for putting everything together. Get a large bowl scrap your spaghetti squash into it, add your sauce and broccoli. Mix everything together. Slice your chicken up and serve it on top of your plated “noodle” mix. Then if you like top with extra cheese. So good! Sounds like a lot of work but its really not bad and so worth the work!
