Crock Pot Chuck Roast

Made this for dinner tonight. I had made it a while back but forgot to write down what I did. So I had to try and recreate it because it was so good last time. And it turned out just as good this time! I love using my crock pot it makes for such a quick and easy dinner! This time we used potatoes but since we only rarely eat potatoes, last time I made it with just carrots. Either way delicious! 

Crock Pot Chuck Roast

1 2 lb chuck roast

9 small yellow potatoes

1 lb. bag baby carrots

3-4 tbsps. crushed garlic

1 medium white onion (although last time I didn’t have an onion and used green onion and that was good too)

2 tbsps. thyme

1 tbsp. rose mary

pepper to taste

4 cups chicken broth

First you will want to trim some of the fat off of your chuck roast, if you want. Next get a large frying pan out and put 1-2 tbsps. of olive oil in  it. Heat this up once the olive oil is hot place your roast in the pan and sear all sides. Maybe 3 minutes each side. Set this aside. Now in a large crock pot dump your bag of carrots in and spread across the bottom evenly. Cut your potatoes in half and place in a layer on top of the carrots. Now sprinkle your garlic across all of that. Once that is done, get your roast and place on top of everything. Chop up your onion leaving it in fairly large chunks and place around your roast. Next top your roast with your seasonings. Lastly pour your chicken broth in around the edge. Cover your crock pot and cook on high for 5-6 hours. Or if you have the time cook on low for 8-10 hours. I cooked mine for about 5 hours on high and then turned it down to low and cooked for about another hour to hour and half. So fast and easy! Great for days where I know I am going to be busy or just don’t feel like cooking!
