Tomato and Mozzarella Chicken

This was dinner last night! So easy and we ate outside on the patio which was so nice!

You will need:

1/2 – 1 lb boneless skinless chicken breasts

1 tomato

3-4 green onions

salt and pepper


Preheat the oven to 350. Grease an 8×8 glass baking dish. Next trim your chicken breasts if you need to and pound them out till they are thin. Place your chicken in your glass dish. Slice a tomato thick and layer on top of the chicken. Dice up your green onion and layer this next. Now sprinkle with whatever seasonings you want, I used salt, pepper, and a little Mrs. Dash. Lastly cover everything in mozzarella cheese as thick as you like it! Cover the baking dish with foil and cook for 20-30 minutes. Then serve! I served ours with a side of¬†avocado¬†which went really nice with the chicken.
