This dinner was a quick, I don’t know what to make, throw this together kind of dinner. It turned out really good! Josh loved it and so did I!
1/2 lb boneless skinless chicken breast
1 cooked spaghetti squash (see my how to cook a spaghetti squash)
1/2 can diced tomatoes
salt, pepper, onion powder, garlic powder, dried oregano to taste
First of course get your spaghetti squash cooking. Once it has about 20 minutes left, then you will want to start your chicken. We cooked our chicken up in butter in a non-stick skillet, we seasoned it with a blackened chicken rub, but you can use whatever (if you want a blackened seasoning mix see my Blackened Chicken Alfredo recipe or check out http://www.joyfulabode.com/2009/07/27/spicy-bronzed-chicken-rub-recipe/). Once your squash is done scoop it out into a large bowl, add your tomato and spices to it and mix. Serve with as much mozzarella as you want on top and sliced chicken breast on top of this! So good!
