I woke up with the desire to bake something good. Its overcast and rainy outside a perfect day to bake! I am crazy about anything orange flavored, chocolate and orange, orange chicken, orange tea, need I go on. So this morning I decided I wanted to bake something with orange. And this amazing orange coffee cake is what I came up with! Please enjoy!
1 tsp. vanilla
4 tbsps. of butter
2 tbsps. raw honey (if you use regular honey its not as sweet so you may need to add more)
1/2 cup of coconut flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. clove
1/2 cup ground almonds (grind them in a food processor or blender but not too long or you will have flour)
1 tbsp. butter
1 tbsp. raw honey
1/2-1 tsp. orange zest (either from another orange, dried, or from your first orange before you blend it)
1/2 tsp. cinnamon
Preheat oven to 375 degrees. In a large bowl whisk your eggs and set aside. Next grab your orange and cut into 1/8th sections (make sure to remove the stem) and place in a blender or food processor. Pulse until completely pureed (yes, peel and everything). Remove any large pieces that didn’t break down (if any). Now add to egg mixture. Stir until combined. Add vanilla and stir again. In a small bowl place butter and raw honey, microwave until softened. Add this to the egg mixture and stir until combined. Now add your dry ingredients to the mixture and whisk in. Make sure to whisk only until everything is combined, you don’t want to over mix it. Now grease an 8×8 glass baking dish and pour your batter into the dish. In a small bowl combine all of the ingredients for the topping. Microwave until butter and honey are softened. Mix with a fork and crumble over the top of your batter (kind of makes a sticky mess). Then place in oven and bake for 20-25 minutes or until a toothpick inserted comes out clean. It’s delicious served hot with a fresh cup of coffee!
