Chicken No-Noodles Soup

Josh and I were both craving homemade chicken noodle soup last night. But of course we can’t have noodles so I made chicken noodle soup without the noodles. Josh isn’t normally one to finish the leftover broth in his bowl but he ate everything broth included. It was so delicious and really hit the spot!

You will need: 

1 large boneless skinless chicken breast (about 1/2 pound)

4 tbsps. butter

6-7 celery stalks

1 onion

4 cups chicken broth

10-12 carrots

2 tsps. lemon juice

1 tbsp. garlic powder

1/2 tbsp. onion powder

1 tsp. paprika

1/2 tsp. thyme

pepper to taste

First trim your chicken breast if needed. Next place it in a small pan and fill with water, place this on stove top, cover, and cook over medium heat until cooked through. About 15 minutes. In the meantime dice up your onion and chop your celery. In a large soup pot melt butter over medium-high heat. Now add your onion and celery and cook until soft 5-10 minutes, stirring occasionally. Next peel and dice up your carrots. Once your onion and celery are soft add your carrots and then your chicken broth. Boil uncovered until carrots are soft. Turn off heat but leave on burner and add your cooked, diced or shredded chicken and the rest of the ingredients. Mix and serve! Yummy! Makes about 4 servings.
